1 cup plus 2 tablespoons (180g) tablespoons plain flour
¼ cup (50g) sugar
Pinch of salt
1 teaspoon chopped rosemary
6 tablespoons (90 g) unsalted butter, chilled and cut in cubes
1 large egg, lightly beaten
1 tablespoon butter
2 conference pears
1 ½ tablespoon honey
2 oranges, juice only
1 cup whole milk
2 oranges, zest only
3 eggs
¼ cup light brown sugar
