Cashew & Mint Fresh Rolls

With all this amazing weather we’ve been having (apart from today!) and being in the middle of my exams, all I can think about it summer! This is one of my favourite things that my mom used to make for us on hot days when you feel like a fresh and healthy lunch. Fresh rolls are so yummy, all the satisfaction of a spring roll without all the grease or guilt! The sheets of rice paper when they’re fresh, rather than fried like most people are used to, are really low in calories (only about 30 cals per sheet) and are so delicious when they’re filled with all these gorgeous ingredients!
Makes 2 rolls

Ingredients: 

Ingredients:
2 Rice Paper Sheets (I got mine in an Asian market)
1 Carrot
1/4 Cucumber
1 Onion
1 Handful of Bean Sprouts
Cos Lettuce
1 Tablespoon of Cashews
Few Mint Leaves
Optional: 1 Chicken Breast, Avocado, Red Cabbage etc any other veg you like!
