1 large onion, diced
1-1/2 teaspoons kosher salt
4 tablespoons olive oil
1 tsp lemon zest
1 tablespoon lemon juice
¾ cup chopped dried apricots
½ cup chopped roasted almonds
¼ cup chopped parsley
