Chipotle Mexican Steak and Cilantro Lime Rice Burritos

Notes: 

* 2 very large burritos or 4 normal-size burritos

Ingredients: 

Steak Marinade
1 chipotle pepper
1 teaspoon adobo sauce
1 tablespoon chile powder
2 teaspoons cumin
1 teaspoon dried oregano
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1 teaspoon pepper
1 teaspoon kosher salt
3 large cloves garlic, minced or grated
1/4 cup olive oil, plus more if needed
2 steaks of your choice (I like New York strips)
Cilantro Lime Rice
2-3 cup cooked basmati rice, hot
1/4 cup cilantro, chopped
1 tablespoon fresh lime juice
To assemble
2-4 large burrito size tortillas
3/4 cup pepper jack cheese, shredded (use more or less to your liking)
3/4 cup cheddar cheese, shredded (use more or less to your liking)
Optional add ins: salsa, guacamole, lettuce, black beans, sour cream or greek yogurt
