Ingredients: 

Makes 10-12 Filled Cakes

1 Cup Mochiko (glutenous rice flour)
1/4 Cup Sugar
2/3 Cup Water
2-3 Drops red or green food coloring, optional
Cornstarch or Potato Starch, for dusting

Filling Ideas:
Anko (store bought or recipe below)
Strawberries
Raspberries

Anko (Makes enough for 3-4 batches of daifuku):
1 14 oz Can Adzuki Beans
1/2 Cup Water
1 Cup Sugar
1 Tbs Vegetable Oil
1-2 Pinches Salt
