Dorothy's Crock Pot Hot Beef Sandwiches

Something very simple that's very good. Try to get a chuck with a large 'eye'. The packaged fresh rolls from Safeway work great for this at a pot luck.

Ingredients: 

3-4 lb. chuck eye roast (larger 'eye', more flavor)
1 bay leaf
1 garlic clove minced
1 onion chopped
1 16 0z. jar Greek pepperoncini (whole or sliced)* DO NOT DRAIN the Pepperoncini


Put everything in a crock pot.   Cook on high 1-2 hours, then low until cooked (about 6-8 hours total).  Break up with fork as it cooks.  You may need to slice it up in the end, depending on the cut of meat.

*The sliced pepperoncini seem to make it hotter.  It might be too hot for some people.  The whole pepperoncini make a mild dish that everyone enjoys.
