6 oz. (about 2 links) cooked chicken sausage (with 8g fat or less per 3-oz. serving)
6 oz. raw pork tenderloin, chopped and trimmed of excess fat
1 14.5-oz. can no-salt-added diced tomatoes (not drained)
1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
1 cup low-sodium fat-free chicken broth
½ cup uncooked brown rice
1 tbsp. chopped garlic
1 tsp. Cajun seasoning
½ tsp. hot sauce, or more to taste
¼ tsp. dried oregano
¼ tsp. ground thyme
3 slices center-cut bacon or turkey bacon
Salt and black pepper, optional
