Lemon, Parsley & Parmesan Pasta

Ingredients: 

2 cups parsley
2 galric cloves
1/4 tsp red pepper flakes
1/2 tsp lemon zest
salt and pepper to taste
3/4 extra virgin olive oil
1 lb trofie or other short twisted pasta
1 cup grated parmesan cheese


  1. Make the pesto: in a food processory, puls parsley, garlic, red pepper, lemon zst and 1 tsp salt until coarsely chopped. With maching running, add oil in a slow, steady streaming, processing until bleneded.
  2. Cook pasta to aldente, reserving 1/4 cup pasta water
  3. Toss pasta with pesto and parmesan, then with the reserved water. Season with pepper.
