Lokshen Kugel Dessert

Ingredients

  • 300g (10.5oz) medium egg noodles
  • 4tbsp butter
  • 2 eggs
  • Approx 100 - 125g (3.5 - 4.5oz) sugar depending on your taste
  • 250g (9oz) cream cheese
  • 500ml (17oz) sour cream
  • 1/2 cup dried cranberries
  • 1 grated rind of orange

Directions

  1. Cook the noodles in boiling unsalted water until tender.  Drain and mix with butter.
  2. At the same time, in a large bowl, beat together the eggs and cream cheese, then beat in the sour cream and orange rind. Mix in cooked noodles and cranberries.
  3. Pour into a large baking dish and bake at 180C (350F) for 30 minutes or until set.

Tips / Substitutes: Instead of cranberries and orange, add raisins. Eat it warm with a little milk or light cream.

Preparation Time: 50 minutes, including cooking time
