Low Carb Pumpkin Protein Loaf/Muffins

Ingredients: 

1/2 cup pumpkin
1.5 scoop vanilla protein (or chocolate if you like the choc/pumpkin combo)
1/2 cup egg whites
Cinnamon or Pumpkin Pie Spice to taste
1 stp Vanilla
Stevia or Splenda
1/2 tsp Baking Powder


  1. Blend together and bake at 350 in either muffin tins or small loaf pan.
  2. Good with chocolate protein.
  3. Kind of a mini chocolate cake. Awesome topped with any nut butter.
