Mint-Tahini Dressing

Notes: 

Makes 4 servings (2 tbsp. per serving)

Ingredients: 

1 clove garlic, chopped (My note: It's totally ok to use the pre-chopped bottled version from the store if you need a shortcut.)

1/4 cup fresh lemon juice

2 tbsp. finely chopped fresh mint

1/4 tsp. salt

1/2 tsp. red pepper flakes (optional)

2 tbsp. tahini (My note: You may need to leave the tahini out at room temperature for about 30 minutes if it has been refridgerated so it will be easier to combine when you are whisking.)
