Mongolian Seitan Stir-fry

Ingredients: 

3 cups seitan, sliced thinly
¼ cup cornstarch
oil for frying
¼ cup water
⅛ cup tamari
1 tablespoons mirin
¼ cup brown sugar
¼ teaspoon red pepper flakes
½ tablespoon oil
½ cup green onions sliced
1 cup sugar snap peas
½ cup mushrooms, quartered
½ Tablespoon minced garlic
½ teaspoon minced ginger
