Moroccan Apricot Chicken

Ingredients: 

2 tablespoons olive oil

About 10 chicken drumsticks or thighs (bone in), or a whole chicken cut into pieces

2 onions, chopped

2-3 cloves garlic, chopped

1 teaspoon each cumin seeds and coriander seeds, crushed (or ground cumin and coriander)

2 tablespoons tomato paste

¾ teaspoon smoked paprika

¼ teaspoon mixed dried herbs

2 tablespoons sweet chilli sauce

1 x 400g can crushed tomatoes

1 x 400g can apricots in juice or syrup

1 cup chicken stock
