Oat Buttermilk Pancakes

Ingredients: 

1.25 cups regular rolled oats
.75 cup all purpose flour
.5 cup whole wheat flour
1 tbsp baking powder
3 egg whites
2.25 cups buttermilk
2 tbsp oil
2 tbsp honey (optional)
1 tspn vanilla


1. Stir together oats, flour, baking powder and salt in a large bowl.
2. Beat egg whites with a fork, stir in buttermilk, oil, honey and vanilla in a medium bowl. Add to flour mixture. Stir until moistened but lumpy. Set aside for 15-30mins.
3. Coat an ingested griddle or skillet with nonstick spray. Preheat griddle to over med-high heat.
4. Pour .25 cup of batter onto hot griddle / skillet. Spread into a 4 inch circle.
5. Cook over medium heat for 4-6mins or until pancakes are golden. Turn to cook other side when pancake bubbles and edges are slightly dry.
