Onion, Mushroom & Thyme Tart

Ingredients: 

3 tablespoons olive oil
2 large yellow onions, cut into thin half moons
2-3 cups sliced mushrooms, try to use cremini or baby portobello mushrooms
1 teaspoon salt
5 to 7 sprigs fresh thyme, leaves stripped and chopped
1-2 sheets vegan frozen puff pastry, defrosted but kept cool
