Pea, Beans and Quinoa Salad

Ingredients: 

Serves 2 for dinner or 6 as a side
•1 1/2 cups cooked quinoa
•1 cup cooked black beans, rinsed
•1 cup cooked black eye peas, rinsed
•1 cup cooked corn off the cob
•2 green onions, chopped
•1 Serrano pepper, minced
•1/2 small red bell pepper, chopped
•1/2 cup fresh cilantro, chopped

Dressing:
•4 tablespoons salad oil
•2 tablespoons lime juice
•1 tablespoon white wine vinegar
•1/2 teaspoon sugar
•1/2 teaspoon salt
•1/2 teaspoon fresh ground pepper
