Pennsylvania Dutch Apple Dumplings


For the dough:
2 tsp. fine sea salt
2/3 cup ice-cold water
5 cups all-purpose flour
1/2 tsp. baking powder
4 sticks unsalted butter, chilled and cut into cubes

For the apples:
4 honeycrisp apples, each 6 to 8 oz.
1/4 cup plus 1 Tbs. firmly packed dark brown sugar
2 tsp. ground cinnamon
1 tsp. kosher salt
12 Tbs. (1 1/2 sticks) unsalted butter, at room temperature
1 egg, lightly beaten with 1 tsp. water
Warmed cream for serving (optional)
Caramel sauce for serving (optional)
