A Proper Giblet Gravy

Notes: 

Makes about 2 cups

Ingredients: 

2 tablespoons butter
2 stalks celery, chopped
1 large carrot, chopped
1 small onion, chopped
A few cracks of black pepper
Giblets from a turkey (neck, liver, gizzard, sometimes heart)
A few sprigs thyme
1/2 cup drippings from a roasted turkey or chicken
2 tablespoons flour
