Dressing:

1/3 cup olive oil
1/3 cup balsamic vinegar
1/2 – 1 Tbsp coconut sugar, maple syrup or honey
2 tsp Dijon mustard
½ tsp salt
pinch of pepper

Blitz - for 1 cup uncooked quinoa
