Raspberry Beignets with Vanilla Dipping Sauce

Ingredients: 

1 tablespoon plus 2 1/2 teaspoons active dry yeast
1 cup warm water
1 cup all-purpose flour
1 1/4 sticks unsalted butter, at room temperature
2/3 cup granulated sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon kosher salt
3 1/2 cups bread flour
Extra flour, for rolling the dough (about 1 cup total)
1 gallon fryer oil
3/4 cup raspberry jam (preferably seedless), in a pastry bag fitted with a small tip
Granulated sugar, for garnish
Vanilla Dipping sauce, for serving, recipe follows
2 cups heavy cream
2 cups whole milk
2 vanilla beans, split and scraped
12 egg yolks
1 cup granulated sugar
1 tablespoon vanilla extract
