Ingredients: 

1 1/2 cups (300g) dried red lentils, washed, drained
1 tbs cumin seeds
1 tbs ground turmeric
1 tsp mustard seeds
1/2 tsp chilli powder
1 tbs sunflower oil
1 onion, thinly sliced
3 garlic cloves, finely chopped
1 tbs grated fresh ginger
400g canned chopped tomatoes
1 tsp caster sugar
100g baby spinach leaves
