Roast Chicken Stuffed with Zucchini and Cheese

Ingredients: 

1 medium zucchini (about 1/2 pound)
Kosher salt
1/2 medium onion
2 T extra virgin olive oil
1 garlic clove
1 t fresh thyme
1 1/2 oz Parmigiano-Reggiano
2 slices firm white bread
1/4 c whole milk ricotta
Freshly ground black pepper
One 3 1/2 pound chicken
