1 small pork tenderloin (about 8 ounces), trimmed
Salt and black pepper
2 teaspoons chopped fresh thyme
1 teaspoon olive oil
2 green apples, each cut crosswise, or horizontally, into 3 rounds
1/2 cup barley
1/2 cup white wine or apple cider
