Salted Caramel Pear Tarts

Ingredients: 

1 x 20 cm x 20 cm puff pastry sheet (or see page 193)
4 ripe pears, peeled, quartered and cores removed
1 cup salted caramel (see below)
vanilla bean ice cream, to serve (or see page 207)

Salted caramel - makes 2 cups
1½ cups caster sugar
½ cup water
½ cup unsalted butter, chopped
1 tsp salt
¼ cup cream
