2 tablespoons olive oil
6 large chicken thighs, skin removed
1 large yellow onion, chopped
4 large garlic cloves, minced
1 28-ounce can crushed tomatoes with added puree
cherry tomatoes sliced in half
Brussel sprouts, par boiled sliced in half and pan fried
handful of spinach
2 tablespoons red wine vinegar
1 teaspoon ground cumin
4 dashes hot pepper sauce (such as Tabasco)- optional
1/4 cup chopped fresh parsley
3 tablespoons chopped fresh cilantro
