Savory Watermelon Towers

Ingredients

  • 1 seedless watermelon
  • 8 oz cream cheese
  • 6 oz blue cheese crumbled
  • 1 package micro greens

Directions

Prepare the WATERMELON TOWERS:

  1. Cut watermelon in half with flat side on cutting board slice 1 1/4 " sections.
  2. Take one section and lay flat on cutting board. Using a round cutter, cut out as many towers as possible from each section.
  3. Using a melon scoop carefully scoop out the insides of each of the towers leaving at least a 1/8" wall and bottom for each tower.

Prepare the BLUE CHEESE MOUSSE:

  1. In a mixing bowl cream together cream cheese and blue cheese until smooth.

Complete the WATERMELON TOWERS:

  1. Fill a pastry bag with the mousse and pipe mixture into watermelon tower.
  2. Garnish with a few micro greens.

Servings: 50 towers
