mix everything together:
1 cup cooked chickpeas, slightly mashed with a fork, or potato masher
2 scallions, (white and green parts) chopped
1/2 tablespoon grated fresh ginger
1 teaspoon sesame oil
2 eggs, gently whisked
1/2 teaspoon dried coriander
1/4 cup chopped cilantro
salt & pepper
roll in panko and pan fry:
1 cup of panko breadcrumbs
a few pinches of sesame seeds
2 more tablespoons olive oil, for the pan
