1 cup quinoa (preferably red)
1 3∕4 cups water
1∕3 cup walnut pieces
2 cups arugula
1 large carrot, sliced into matchsticks
1 red bell pepper, thinly sliced
1⁄4 cup olive oil
4 tablespoons low-sodium soy sauce
3 tablespoons rice vinegar
2 garlic cloves, minced
1 tablespoon ginger, minced
2 teaspoons sesame oil
1⁄4 teaspoon salt
20 rice paper wrappers
Juice of 1⁄2 lime
2 teaspoons garlic chili sauce (optional)
