Stuffed Peppers with Thai Curry Rice and Mushrooms Recipe

Notes: 

Super tasty and full of flavor. I completely skip step 1 and they turn out fine. I have also subed in zucchini for the mushrooms.

Ingredients: 

4 large bell peppers
2 tablespoons unsalted butter or grapeseed oil
2 medium shallots, minced
4 garlic cloves, minced
Salt
3/4 cup long-grain white rice
1/2 cup unsweetened coconut milk
1 tablespoon minced fresh ginger
1 tablespoon Thai red curry paste
1 large jalapeƱo, finely chopped with seeds
3/4 pound oyster mushrooms, cut into 1/2-inch pieces
4 cups chopped spinach
1/4 cup chopped Thai basil, plus more for garnish
1 tablespoon fresh lemon juice
