Sue's Black Bean Soup

250gm

beans

soaked in stock overnight.simmer in the stock with 3 bay leaves until almost tender - about 1 1/4 hours. in bacon fat sautee:

2 chopped onions

2 large carrots

2 sticks celery

when they are soft add

6 cloves minced garlic

1T ground cumin

chili to taste - is you are using fresh chilies skin them by blackening because the skins are tough - i use about 4 large with seeds.

chopped red pepper

cook until garlic is soft - 2 mins

add the

beans

+ stock to this - just put everything in one pot now and add 1 T brown sugar, and check seasonings.

simmer for 20 mins or so. take a bout a thrid of mix out and cool enough to blend then return to pot. i usually let the whole lot cool a bit then just blend a bit with hand blender. take out bay leaves before blending. add lemon or lime juice 3T, or squeeze on top - serve with sour cream and corn chips - any questions let me know :)
