Olive oil
1 large onion, chopped
4 cloves of garlic, minced
1 2-inch chunk fresh ginger, peeled and thinly sliced - about 1/4 cup
3 large sweet potatoes, about 2 1/2 pounds - peeled and cubed
3 tablespoons light miso
4 cups chicken or vegetable broth, or water
1 cup whole milk
Salt and pepper
