1 tablespoon extra virgin olive oil
1 large yellow onion, chopped (1½ cups)
1 large green bell pepper, preferably organic, chopped (1 cup)
4 garlic cloves, minced (1 tablespoon plus 1 teaspoon)
1¼ pounds ground turkey breast or ground buffalo
Salt
3 tablespoons chili powder
1 teaspoon smoked paprika (pimentón dulce, sweet)
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon chipotle powder
1 bay leaf
½ teaspoon freshly ground black pepper
½ teaspoon hot red pepper flakes, or to taste
1 (28-ounce) can crushed tomatoes
2 cups low-sodium chicken broth, plus more if needed
1 tablespoon red wine vinegar
1 (15-ounce) can red kidney beans, rinsed and drained, or 1½ cups cooked kidney beans, drained
