Vegan Clam Chowder

Ingredients: 

2 cups of raw cashews, soaked overnight
3 1/2 cups red potatoes, diced with skin left on
2 cups dried oyster mushrooms
2 TB raw coconut oil
1 tsp liquid smoke
1 tsp soy sauce
2 cups white onion, diced
8 cloves garlic, sliced
2 tsp dried thyme
1 tsp fresh black cracked pepper
1/2 TB salt
1/3 cup flour
3 TB mirin
9 cups fresh homemade stock, with a Not-chick'n bouillon cube thrown in
3 bay leaves
1 cup oyster mushroom stems, sliced into scallop-sized pieces (optional)
earth balance
olive oil
dried parsley
