I roughly do half wheat and half white flout and then toss in about 3 T of Wheat Germ, Sub melted butter for the oil and then add a TON of spices to the mix. I roll mine out to 1/16th of an inch and they end up perfect after 15 minutes in the oven. Any thicker and the crackers become chewy.
I raised the cooking temperature to 400 and that shortened the cooking time to just 20-25 minutes. At first I found the crackers bland. I increased the amount of salt and that helped but still these were some boring crackers. I light sprinkling with garlic powder did the trick. Now they are quite good, quite good indeed.
I used all whole wheat flour, roasted red pepper olive oil instead of veg oil, added 1/4c brown sugar & only lightly salted the top before baking. I rolled these out very thin on parchment paper & got 4 cookie sheets worth. Mine took 25-30 minutes to crisp up.
