Ingredients
- 3 packages frozen chopped spinach
- 1 medium chopped onion
- 2 eggs
- 1/2 cup reduced fat sour cream (or fat free)
- 1 package (1 1/4 cups) of shredded Parmesan cheese
- 2 Tbsp butter
- Salt & pepper to taste
- Small package of reduced fat crumbled Feta cheese - for topping
Directions
- Cook frozen spinach in small amount of water until thawed (or in microwave) - drain dry
- In small fry pan, cook onions in butter until tender
- Beat eggs
- Mix all ingredients (NOT FETA)
- Put into a greased casserole dish or square 9x9 baking pan
- Bake at 350 uncovered for 25 - 30 minutes (until center is set)
- Sprinkle top with feta cheese before serving
- Enjoy!
