Pineapple Bread Pudding with Chocolate Sauce

Notes:

Plan Ahead: If you want to get a jump start on the prep, follow steps 1-4, then stir in the coconut and pineapple and refrigerate the mixture overnight. The next day, bake the pudding as directed.

Ingredients: 

1/3 cup sweetened flaked coconut
1 (20-oz) can pineapple chunks in juice, drained
3 large eggs
2 egg whites
1/2 cup sugar
1 tsp salt
2 1/4 cups fat-free milk
1 cup light (reduced-fat) coconut milk
1 Tbsp vanilla extract
5 cups (3/4-inch) cubes French bread
2 oz bittersweet or semisweet chocolate, chopped
2 tsp Dutch-process cocoa powder
