Skillet Rice and Beans with Corn and Fresh Tomatoes

Ingredients: 

1/2 t olive oil
1/2 onion, chopped

3/4 c corn

1/2 c long-grain white or brown rice
2 garlic cloves, minced
1/2 t cumin
pinch cayenne pepper

1 1/2 to 2 c vegetable broth (plus 1/2 c water for brown rice)

1 (15 oz) can black beans, rinsed

6 oz grape tomatoes, quartered
2-3 scallions, sliced thin
2 T minced fresh cilantro
1/2 T lime juice
