Apple and cedro brioche

Ingredients: 

plain flour
lemon, finely grated rind and juice only
ground cinnamon
dried yeast (about 2 sachets)
caster sugar
honey
eggs, at room temperature, lightly beaten
butter, softened
cedro, finely chopped (see note)
egg yolk, lightly beaten with 1 tbsp milk
small Granny Smith apples, unpeeled, finely chopped
demerara sugar
pearl sugar (see note)
