Chef Richard's Chicken Sloppy Joes

Ingredients: 

1¼ lbs. ground light meat chicken
1 medium red pepper, diced fine
1 medium orange pepper, diced fine
1 medium yellow pepper, diced fine
1 large white onion, quartered
2 stalks celery, cut into large chunks
2 medium carrots, cut into large chunks
2 garlic cloves
6 tablespoons fresh chopped pineapple
1 14.5 oz. can low sodium diced fire roasted tomatoes
2 tablespoons pickled relish (Heinz)
1 6 oz. can tomato paste
4 tablespoons low sodium Worcestershire sauce
3 teaspoons paprika
2 tablespoons honey
10 slices whole wheat baguette, sliced on the bias about ½ inch thick
1 tablespoon olive oil
