Baked Fish & Veggies

Notes: 

One of our favorite and most simple recipes. The photo is from the web until I can get a photo of our version. You can use any veggies you have available, just cook to a size that will allow them to cook evenly in 25 minutes.

Ingredients: 

4-6 talapia filets, or any low cost white fish
broccoli florets
cauliflower florets


  1. Select a large ceramic or glass baking dish our is 12" x8".
  2. Spray the pan with canoloa oil so the fish will not stick
  3. Pat dry filets and sprinkle with our veggie spice mix (see recipe under spices)
  4. arrange the filets in the botton of the pan.
  5. Take veggies and sparay with canola oil and coat with the same veggie spice mix, toss well to evenly distribute,
  6. Surround the outter edge with broccoli and cauliflower florets. You can also use any veggie you like, we also use zuchinni, mushrooms , even carrots if they are cut faily small to cook evenly with the rest.
  7. Bake in a 350 oven for 25 minutes
  8. Serve with Rice Pilaf
