Spinach, Coconut & Black Bean Curry

Ingredients: 

1 tbsp. olive oil
1 onion, diced
3 garlic cloves, minced
1 tsp. fresh grated ginger
1 serrano pepper, minced
2-14 oz. cans black beans, rinsed and drained
2 tbsp. lime juice
1-14 oz. can coconut milk
½ cup vegetable broth
1 tbsp. garam masala
¼ tsp. ground coriander
⅛ tsp. ground cardamom
pinch chili powder (or to taste)
salt & pepper to taste
5 oz. fresh spinach, sliced
¼ cup fresh cilantro
cooked rice, for serving
