Baileys Chocolate Bundt Cake

Notes: 

This cake was exceptional! Dense, moist and chocolatey, with a subtle but perceptible taste of Baileys. (Don't worry about the amount of batter this makes; it will look like too much for the pan and will rise incredibly high in the oven, but it's fine.) I opted to use a chocolate fudge cake mix, added a couple tablespoons of Dutch cocoa, a splash of vanilla, a couple teaspoons of instant Espresso powder, and a couple decent handfuls of chocolate chips. I made the glaze suggested in the recipe but found it tasted too powdered sugary-ish. Instead, I made a Baileys whipped cream (recipe listed separately). It was sublime!

Ingredients: 

1 box yellow cake mix
6 oz. package instant chocolate pudding mix
½ cup sugar
4 eggs
1/2 cup cooking oil
1 stick Simple Truth Organic Butter, melted
¾ cup water at room temp
¼ cup Jameson Irish Whiskey
¼ cup Baileys
