1 t baking soda
1 t cinnamon
1/2 t nutmeg
1/2 t salt
1 c brown sugar
3/4 c vegan butter
2 t vanilla
1/4 c applesauce
1/4 c non-dairy milk (coconut or oat)
2 1/2 c oats
1 1/4 c raisins
3/4 c chopped pecans or walnuts
Whisk together the first 5 ingredients. Beat together sugar and butter. Add vanilla, applesauce and milk. Stir in dry ingredients, oats, raisins and nuts. Refrigerate at least 1 hour.
Bake at 350 8-9 min or until golden on top.
