2 Naan flatbreads

Goat cheese
Fontina cheese

1 T olive oil
1/2 lb cremini mushrooms, sliced
1 green pepper, chopped
4 c fresh spinach
1/4 t salt
1/8 t pepper
1/4 c pesto
2 Roma tomatoes, sliced
2 c shredded mozzarella
Cook mushrooms and green pepper in oil, 5-7 min. Add spinach, salt and pepper, cook and stir until spinach is wilted. Spread pesto on grilled naan bread, top with vegetables and cheese.
Caramelized Onion and Mushroom
1 T butter
Red onion, thinly sliced
pinch salt
1/4 t sugar
1/2 c sliced cremini mushrooms
1 T goat cheese, softened
1/3 c shredded Italian cheese
oregano, salt, pepper
Melt 1/2 T butter in skillet. Add onion and salt Cook on med-low 10 min, stirring frequently. Sprinkle with sugar and cook 10 more min. Remove from pan and set aside.
Melt remaining 1/2 T butter, saute mushrooms until brown.
Top pizza crust with goat cheese, Italian cheese, onion, and mushrooms. Sprinkle with oregano, salt and pepper. Grill or bake in 400 oven 12-15 min.
