Mama's Chicken Curry

I have used chickpeas instead of chicken for a vegetarian option, was very good.

Ingredients: 

4 large chicken breasts, cooked
1 can cream of chicken soup (or any creamed soup)
2/3 cup mayonnaise
1/3 cup evaporated milk
½ cup grated cheddar cheese
1 teaspoon lemon juice
½ teaspoon curry powder
1 bag frozen broccoli, thawed
Bread crumbs


  1. Pull chicken from the bone. Layer broccoli and chicken in a 9x 13 casserole pan.

  2. Combine undiluted chicken soup, mayo, milk, cheese, lemon juice and curry powder.

  3. Pour over broccoli and chicken. Sprinkle with bread crumbs.

  4. Bake at 350 degrees for 30-40 minutes.

  5. May be frozen before baking.
