1/4 cup almonds
1 cup fresh basil + 2 tbsp fresh basil
6 tbsp olive oil
1/4 cup parmesan cheese, grated
1/2 tsp salt
1/2 tsp pepper
2 1/2 lbs chicken breasts
1 lb tomatoes
3 tbsp cider vinegar
Chop the garlic, almonds and 1 cup basil in a food processor
Add 1/4 cup oil, the parmesan cheese, salt and 1/4 tsp pepper
Spoon 1/2 of the pesto over the chicken and broil on a foil-covered pan for 10 min
Turn chicken, top with remaining pesto, broil another 8-10 min
Chop the tomatoes and add remaining 2 tbsp basil, 2 tbsp olive oil, 1/8 tsp pepper and the cider vinegar, and serve over the chicken
