Apple Cake

Notes: 

I got this recipe from my aunt, Dot Goodson

Ingredients: 

1 cup oil
1/2 cup sugar
2 eggs + 1 egg white
1 tsp vanilla
1 cup chopped nuts (optional)
2 cups flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3 apples, chopped (about 2 cups)

Frosting
1/2 cup butter/margarine
1 1/2 cups powdered sugar
1 egg yolk
1/2 tsp vanilla

  1. Mix or sift together dry ingredients.  Set aside
  2. Stir together oil, sugar, eggs and vanilla
  3. Stir in nuts and chopped apples
  4. Mix in dry ingredients
  5. Bake at 350 for 45 minutes
  6. Frost cake once it has cooled
  7. Store in the fridge

Frosting

  1. Cream together butter and powdered sugar
  2. Stir in egg yolk* and vanilla

*The fact that you are using a raw egg yolk in the uncooked frosting lets you know how old this recipe is.  Nowadays the food police won't let you do that.  But I've made and eaten this recipe for years and not one person has complained of samonella poisoning.  If you have a fear of raw eggs, I'm sure you can make the frosting without it.
