Phyllo dough, the paper-thin pastry sheets that are used to make Greek treats like baklava and spanakopita, is a fun stand-in for pie crust. Because phyllo is so thin, it dries out quickly and is very fragile. When working with it, be sure to cover the dough with plastic wrap and a damp kitchen towel and handle it carefully. The light, crispy crust that results adds a whole new textural dimension to the Thanksgiving meal.
