Vodka Pie Crust
recipe from Cook's Illustrated

1 teaspoon table salt
2 tablespoons sugar
12 tablespoons cold unsalted butter (1 1/2 sticks), cut into 1/4-inch slices
1/2 cup chilled solid vegetable shortening , cut into 4 pieces
1/4 cup vodka , cold
1/4 cup cold water

2 1/2 cups unbleached all-purpose flour (12 1/2 ounces)

PIE
1 recipe for a 9 inch double pie crust (see above)
1/2 cup unsalted butter
2 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
1 1/2 teaspoons cinnamon
8 assorted tart and sweet apples - peeled, cored, and sliced
