Apricot and Tangelo Fruit Log

Use apricots from Otago.

Ingredients: 

2 cups dried apricots
grated rind of 1 large tangelo
1/2 tsp citric acid
3/4 cup icing sugar
1 cup ground almonds
1 cup dessicated coconut, plus 1 cup to roll the logs in
